INSTRUCTIONS:

  1. Whisk the warm water and yeast together in the bowl of your stand mixer, fitted with the dough hook attachment.
  2. Add the flour, sugar, and salt. Beat on low speed for 2 minutes. The dough will be somewhat stiff and look dry. Keep the dough in the mixer and beat for an additional 6-7 minutes.
  3. Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl.
  4. Cover the bowl with aluminum foil, plastic wrap, or a clean towel. Allow the dough to rise at room temperature for 60-90 minutes or until doubled in size. When the dough is ready, punch it down to release any air bubbles.
  5. Line your cookie sheet with parchment paper.
  6. Divide your dough into 8 pieces (just eye ball it, it doesn't need to be perfect). Shape each piece into a ball.
  7. Preheat oven to 425 degrees.
  8. Fill a large pot with water, bringing it to a boil. Drop the bagels in 2-4 at a time and let cook for 1 minute.
  9. Brush the tops and sides with your egg and bake for 25 minutes.
