Cheez- It's

YIELD: 24 SERVINGS 

PREP TIME: 1 HOUR 25 MINUTES 

COOK TIME: 12 MINUTES

TOTAL TIME: 1 HOUR 37 MINUTES


INGREDIENTS:

  • 1 8-ounce block extra sharp cheddar cheese, coarsely shredded. 
  • 4 tablespoons cubed unsalted butter, at room temperature
  • 1 teaspoon salt
  • 1 cup unbleached all purpose flour (you can also use gluten free flour if needed)
  • 2 tablespoons ice water

INSTRUCTIONS:

  1. Combine your butter and cheese in the bowl of your stand mixer (If you don't have a stand mixer, you can do this by hand just be prepared to use some elbow grease)
  2. Add in your flour, and mix on low speed for 2-3 minutes. Your dough will look really dry and crumbly. 
  3. Slowly add in your water and continue to mix until well combined. Roughly 2 minutes. 
  4. Flatten your dough in a disc and wrap tightly in aluminum foil or plastic wrap. Refrigerate for 1-1.5 hours
  5. Preheat your oven to 375. Roll out your dough and cut into squares. I   used a pizza cutter to cut my squares and a kebab skewer to make the hole.
  6. Bake  for 15 minutes on a well greased cookie sheet. Remove and let cool on a wire rack. Sprinkle with salt!
